US History Gets Cooking

Recently, four of Susie Cirone’s classes researched and cooked historical recipes together. The US History students chose three recipes that were connected to their class reading: Monticello Muffins (Thomas Jefferson), Jackson Jumble Sugar Cookies (Andrew Jackson), and Susan B Anthony Tapioca Apple Pudding.
 
The ingredients of the recipes aimed to be authentic and included locally sourced ingredients, with a few adjustments. For example, Monticello Muffins (a recipe made by slaves) would have taken two days to prepare had they followed the exact instructions. In order to complete their dish within the hour block, baking soda was used in place of yeast to speed up the process. The class discussed why they made changes and concluded that it’s consistent with how recipes are shared—altered according to people’s taste, availability of ingredients, and time.
